I put these teams together after a lot of research, using both conventional and advanced statistics, while also weighing other factors such as award voting and tenure with the team.  I also tried to construct the rosters somewhat realistically, with a balance of different positions. The stats listed for each player/manager are 162-game averages based solely on the numbers they accumulated while with the franchise.  Averages for pitchers are calculated with the formula used by Baseball-Reference.  An asterisk (*) means the player spent their entire career with the franchise.

A Note on 19th Century Players
Comparing players across eras is difficult, and it's especially so for 19th century ballplayers because the game was so different from what we have now.  I included a few pre-1900 players for both clubs, but relegated them to the 40-man rosters instead of the 25-man squads.

Some of the greatest moments in any sports rivalry come when players switch allegiances.  Below are two different All-Traitor teams.  The first team lists the players who contributed the most to both franchises, as determined by the harmonic mean of WAR (Wins Above Replacement).  To do well in harmonic mean a player needs to produce for both teams, and it is calculated thusly: 2*(dWAR*gWAR)/(dWAR+gWAR).  The second team lists the players with the highest franchise WAR of anyone who switched clubs.
